Immersion, and what the water never does in one

Immersion is what makes a French press easy to be consistent with. No pouring skill has to be acquired, because there is no pour to get wrong: every particle meets the same water for the same length of time whatever your hand does.

The "cup" printed on a press is around 120 ml rather than a mugful, which is why an eight-cup press pours roughly three mugs and why most people buy one size too large.
